Modak is a popular sweet prepared during Ganesh Chaturthi, and the filling is an important part of getting the flavour and texture right. A traditional coconut and jaggery filling is simple to prepare, but cooking it at the right temperature is important to prevent burning or sticking.
Step 1: Prepare the Ingredients
For a simple modak filling recipe, prepare grated coconut, jaggery, cardamom and a little ghee. You can also add chopped nuts for extra flavour and texture.
Step 2: Heat Your Cookware
Add a small amount of ghee to your cookware and heat it over low to medium heat. Avoid using high heat, as jaggery can burn quickly.
Add a small amount of ghee to the Triply Kadhai 3 L and heat it over low to medium heat.
Avoid using high heat, as jaggery can melt and burn quickly. Starting with a moderate temperature gives you better control while cooking the filling.
Step 3: Add the Coconut and Jaggery
Add the grated coconut and jaggery to the heated kadai. Stir the mixture continuously so the ingredients combine evenly.
As the jaggery begins to melt, keep stirring and make sure the mixture does not remain in one spot for too long. This can help prevent the filling from sticking to the bottom.
Step 4: Cook Until the Mixture Thickens
Continue cooking the mixture over low to medium heat while stirring regularly.
The filling will gradually become thicker as the moisture reduces. Avoid cooking it for too long, as an overly dry filling can affect the texture of your modak.
The key to making modak filling without burning is to keep the heat controlled and avoid leaving the mixture unattended.
Step 5: Add Cardamom and Nuts
Once the filling has thickened and comes together, add cardamom and your choice of chopped nuts.
Stir everything together and remove the kadai from the heat. Allow the filling to cool before using it to shape your modak.
For smaller batches, the Triply Saucepan 1.5 L can also be useful for preparing sweet fillings and other festive ingredients.
